After MANY attempts, this is the best non-chocolate milk, egg, nut, soy free cake I have come up with! Still perfecting a frosting, but this will likely be the birthday cake of choice for awhile, unless the spice cake I am making this weekend can surpass it!
2t baking powder
1/2t baking soda
1 1/2c water
1T lemon juice
1t vanilla extract
Mix dry ingredients and wet separately and then combine and stir until blended and large lumps are broken up. Batter will remain lumpy. Bake at 350 for 15-18 min. Makes a 9x13, or 24 cupcakes or a combo of regular and mini cupcakes for shorter baking time.
